We all know bakeries, we all eat bread and we all like pastries. Kind of it's over, we can not innovate in the bakery business. May be not, there is still some niches in this field!?
Diet bakery
it's common to have wheat flour, eggs, sugar. To simplify let's say that:
1- people on the keto diet do not eat cakes made with wheat flour because it's high carbs,
2- people on the paleo diet do not eat cakes made with sugar because sugar is a processed food,
3- people on the vegan diet do not eat cakes made with eggs because it's animal.
keto bakery: low energy food is what people suffering from obesity are looking for, people on the keto diet seek to replace high carbs wheat flour with low carbs almond flour or coconut flour for example.
paleo bakery: avoiding processed food is what people on the paleo diet do, in this situation, we can not use sugar because it is a processed food. In paleo baking they replace sugar with maple syrup, a sap concentrate obtained from sugar maple trees.
vegan bakery: it's how to make a cake without eggs, well, in vegan baking we replace eggs with cider vinegar or aquafaba.
it's a kind of alternative baking, where you seek to change the recipes, replace some ingredients with others, change cooking duration and make adjustments to respect customers diets.
